Recipe Book "La Cucina di Carmella"
I never really intended to write a cookbook. The genesis of “La Cucina di Carmella” was simply my daughter, Denise’s, request for me to “pass on the recipes” of the traditional Italian dishes our family has enjoyed for generations. Of course there were no recipes to “pass on”; everything I know about preparing the dishes of my childhood I learned from my mother and grandmother. As most people know, food is the central unifying theme in Italian families and our family was no different. Tomatoes, basil, oregano, peppers, zucchini and squash were always abundant in our vegetable gardens and most of the dishes in “La Cucina di Carmella” are made with these fresh ingredients.

To insure our family’s traditional dishes would be enjoyed for generations to come, I realized I had to convert these dishes into recipes. For two years, I painstakingly sprinkled and measured each ingredient of each dish so that a meal could be accurately prepared in the tradition of my family. Denise assembled these recipes and coordinated the creation of this cookbook, “La Cucina di Carmella”, for the benefit of family and friends. Following an appearance on The Martha Stewart Show, “La Cucina di Carmella” is in its second printing and is now available to all who enjoy the culture and tradition of Italian food.
